Special Guests
For nearly three decades, Scotti Stark has built a career around his passion for wine. From teaching and tasting to production and promotion, he delights in every facet of the trade and loves sharing knowledge with novices and seasoned collectors alike. Working in restaurants to pay his way through college, Scotti had an epiphany after his mentor poured a 1990 Château Léoville Las Cases—an unforgettable moment that set him on a dedicated path. He rose to Wine Director at Pappas Bros. Steakhouse in Houston, where he developed the program and earned a Best Sommelier(s) award from Food & Wine in 2000. In 2004 he moved to Napa Valley to host top clients for Revana Family Vineyard, later developing hospitality programs at Crocker & Starr and Fisher Vineyards. In 2012 he founded Stark Advantage to craft custom itineraries and partnerships that showcase Napa and connect great people to great wines. In 2025 Scotti joined Vineyard 29, further deepening his ties to Napa’s premier producers. Warm, gregarious, and endlessly curious, Scotti sees introducing someone to great wine as pure joy.
Join Russell Bevan at Pappas Bros. Steakhouse for an intimate dinner featuring the wines of Bevan Cellars.
Founded with a relentless focus on site and precision, Bevan Cellars was built around a simple idea: source from the most exceptional vineyards in Napa Valley and craft wines that are unapologetically expressive, powerful, and age-worthy. What began as a small, passion-driven project quickly became one of Napa Valley’s most sought-after Cabernet programs, with highly allocated releases and a devoted collector following.
Russell will share the story behind the vineyards, the vintages, and the evolution of the brand while guests enjoy a curated pairing with one of Houston’s most iconic steakhouse experiences.
A rare opportunity to taste these wines alongside the winemaker who built them from the ground up.
